Parmesan Stuffed Tomatoes



Now that the weather is getting warmer, especially out here in the southwest, I'm craving lots of veggies and fruit! So this week's free recipe from Gooseberry Patch is just perfect! My Guy and I used this recipe, as our side dish, earlier this week. It was so yummy!

Parmesan-Stuffed Tomatoes

4 tomatoes, tops removed
1 c. quick-cooking rice, uncooked
1 c. grated Parmesan cheese
1/4 c. margarine, melted
1/4 c. fresh basil, chopped
1 t. garlic, minced
1 t. salt
1/4 t. pepper
Garnish: Parmesan cheese, fresh parsley

Scoop out tomato pulp, leaving a 1/4-inch shell; coarsely chop pulp. Place tomatoes in an ungreased microwave-safe dish. Mix tomato pulp with rice, cheese, margarine and seasonings. Spoon mixture into tomatoes; spoon any remaining mixture into center of dish. Cover with vented plastic wrap. Microwave on high for 5 minutes, until rice is tender. Garnish as desired. Serves 4.

This is a quick and yummy recipe to add to your "Recipe Box." We grilled pork chops earlier in the week, and this was the perfect addition. It was so fresh tasting. And really quick. We actually used the oven, and it was still really quick cooking. I hope you try this out and enjoy it too! ♥
